Ingredients:
Sweet Potatoes:
• 4 medium sweet potatoes, scrubbed clean
• 1 tbsp olive oil
• ½ tsp salt
• ¼ tsp black pepper
Creamy Mushroom & Spinach Filling:
• 2 tbsp unsalted butter
• 8 oz mushrooms, sliced
• 2 cloves garlic, minced
• 2 cups fresh spinach
• ½ cup heavy cream (or half-and-half)
• ¼ cup grated Parmesan cheese
• ½ tsp salt
• ¼ tsp black pepper
• ¼ tsp nutmeg (optional)

Full Recipe
1️⃣ Preheat oven to 400°F (205°C).
2️⃣ Pierce sweet potatoes with a fork. Rub with olive oil, salt, and pepper.
3️⃣ Place on a baking sheet and roast 45–55 minutes, until fork-tender.
4️⃣ While potatoes roast, melt butter in a skillet over medium heat.
5️⃣ Add mushrooms and cook 5–7 minutes until browned and tender.
6️⃣ Add garlic and cook 30 seconds until fragrant.
7️⃣ Stir in spinach and cook until wilted, 1–2 minutes.
8️⃣ Pour in cream and simmer 2–3 minutes until slightly thickened.
9️⃣ Stir in Parmesan, salt, pepper, and nutmeg. Remove from heat.
🔟 Slice sweet potatoes open lengthwise and fluff insides with a fork.
