Classic Eggs Florentine Recipe

 
 


Eggs Florentine, a timeless brunch delight, marries perfectly poached eggs with vibrant sautéed spinach and a luxurious hollandaise sauce. Ingredients: 

  

For the Eggs Florentine: 

- 4 large eggs 

- 8 cups fresh baby spinach, washed and stemmed 

- 4 English muffins, split and toasted 

- 1 tablespoon olive oil 

- Salt and pepper to taste 

  

For the Hollandaise Sauce: 

- 3 large egg yolks 

- 1 tablespoon lemon juice 

- 1/2 cup unsalted butter, melted 

- Salt and cayenne pepper to taste 

  

Instructions: 

  

Step 1: Sauté the Spinach 

  

1. In a large skillet, heat olive oil over medium heat. Add the baby spinach and sauté until wilted, about 2-3 minutes. 

2. Season with a pinch of salt and pepper. Set aside. 


  

Step 2: Poach the Eggs 

  

1. Fill a wide saucepan with about 3 inches of water and bring it to a gentle simmer. 

2. Crack each egg into a small cup or ramekin. 

3. Create a gentle whirlpool in the simmering water using a spoon and carefully slide one egg into the center of the whirlpool. Allow it to cook for about 3 minutes for a runny yolk. Repeat with the remaining eggs. 

4. Using a slotted spoon, carefully lift each poached egg from the water and place them on a plate lined with a paper towel to drain excess water. 


  

Step 3: Prepare the Hollandaise Sauce 

  

1. In a heatproof bowl, whisk the egg yolks and lemon juice until the mixture is pale and slightly thickened. 

2. Place the bowl over a pot of simmering water (double boiler method) and continue to whisk constantly. 

3. Gradually drizzle in the melted butter while whisking vigorously until the sauce thickens and becomes silky. This should take about 5 minutes. 

4. Season with salt and a pinch of cayenne pepper. Remove from heat and keep warm. 


  

Step 4: Assemble the Eggs Florentine 

  

1. Place a toasted English muffin half on each plate. 

2. Divide the sautéed spinach evenly among the muffin halves. 

3. Gently place a poached egg on top of the spinach on each muffin half. 

4. Spoon a generous amount of hollandaise sauce over each egg. 


  

Step 5: Garnish and Serve 

  

1. Sprinkle a touch of cayenne pepper or paprika on top of the hollandaise for a dash of color and extra flavor.
