- 12 oz (340g) linguine or your favorite pasta 

- 1 cup ricotta cheese 

- Zest of 2 lemons 

- Juice of 1 lemon 

- 3 tablespoons olive oil 

- 3 cloves garlic, minced 

- 1/2 teaspoon red pepper flakes (adjust to taste) 

- Salt and freshly ground black pepper, to taste 

- 1 cup cherry tomatoes, halved 

- 2 cups baby spinach 

- 1/4 cup fresh basil leaves, torn 

- Grated Parmesan cheese, for serving 

- Lemon wedges, for serving 




1. Cook the Pasta: 

   - Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining. 


2. Prepare the Ricotta Mixture: 

   - In a mixing bowl, combine the ricotta cheese, lemon zest, and lemon juice. Mix well to incorporate. Set aside. 


3. Sauté Aromatics: 

   - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes, or until the garlic is fragrant and lightly golden. 


4. Add Tomatoes and Spinach: 

   - Add the halved cherry tomatoes to the skillet. Cook for about 2-3 minutes, allowing them to soften and release their juices. 

   - Add the baby spinach to the skillet and stir until it wilts. 


5. Combine Pasta and Ricotta Mixture: 

   - Add the cooked pasta to the skillet with the tomato and spinach mixture. Toss to combine. 


6. Add Ricotta Mixture: 

   - Pour the ricotta mixture over the pasta and gently toss to coat the pasta evenly. If the mixture seems too thick, add a splash of reserved pasta water to achieve your desired sauce consistency. 


7. Season and Finish: 

   - Season the pasta with salt and freshly ground black pepper to taste. Stir in the torn basil leaves for a burst of freshness. 


8. Serve: 

   - Divide the lemon ricotta pasta among serving plates. Sprinkle with grated Parmesan cheese and additional red pepper flakes if desired. Serve with lemon wedges on the side for an extra squeeze of zesty flavor.
