Spiced Lamb Kofta with Yogurt Sauce



Ingredients: 

  

For the Koftas: 

- 500g ground lamb 

- 1 small onion, finely grated and excess moisture squeezed out 

- 3 cloves garlic, minced 

- 1 teaspoon ground cumin 

- 1 teaspoon ground coriander 

- 1/2 teaspoon ground paprika 

- 1/4 teaspoon cayenne pepper (adjust to taste) 

- Salt and black pepper to taste 

- 2 tablespoons chopped fresh parsley or cilantro 

- Wooden skewers, soaked in water 

  

For the Yogurt Sauce: 

- 1 cup Greek yogurt 

- 2 tablespoons fresh lemon juice 

- 2 tablespoons chopped fresh mint or dill 

- Salt and black pepper to taste 

  

Instructions: 

  

1. Prepare the Koftas: 

1. In a mixing bowl, combine the ground lamb, grated onion, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper. 

2. Add the chopped parsley or cilantro to the mixture and combine everything well using your hands. This will ensure even distribution of the spices and herbs. 

3. Divide the mixture into equal portions and shape them onto the soaked wooden skewers, forming elongated sausage-like shapes. You can make them as thick or thin as you prefer. 

  

2. Cook the Koftas: 

1. Preheat your grill, stovetop grill pan, or oven broiler. 

2. If grilling, cook the koftas on medium-high heat, turning occasionally, until they are nicely browned and cooked through, about 10-12 minutes. If using an oven broiler, place the koftas on a broiler pan and cook, turning occasionally, until well-browned and cooked through. 

3. Remove the koftas from the heat and let them rest for a few minutes before serving. 

  

3. Prepare the Yogurt Sauce: 

1. In a bowl, mix the Greek yogurt, fresh lemon juice, chopped mint or dill, salt, and black pepper. Adjust the seasoning to taste. 

  

4. Serve: 

1. Serve the cooked koftas on a platter, accompanied by the yogurt sauce on the side. 

2. You can serve the koftas with pita bread, rice, or a fresh salad for a complete meal. 

  

5. Optional Garnishes: 

- Sliced tomatoes, cucumbers, and red onions 

- Chopped fresh herbs (parsley, mint, cilantro) 

- Drizzle of olive oil
